In minutes, you have a quick and delicious side dish on the table. Also, asparagus is in season and it’s fairly cheap right now!

  • 2 bunches asparagus, washed
  • 2 tablespoons olive oil
  • Coarse salt and black pepper
  1. Preheat the oven to 425F.
  2. Break off the tough ends of the asparagus.
  3. Arrange the asparagus onto a baking sheet in a single layer.
  4. Drizzle with olive oil and toss well with a pastry brush (basting brush).
  5. Sprinkle salt and pepper.
  6. Roast the asparagus for 12-15 minutes or until crisp-tender.

    This sounds so easy and tasty. I am used to roasting them in a pan with butter and some almonds but your way is much healthier I believe.

    Roasting asparagus is my favourite way to prepare it also! It gets nice and caramelized in the oven. I love to sprinkle it with a bit of goats cheese and a balsamic reduction – yum!
