Breakfast  Egg Muffins

– cauliflower – eggs – bacon or ham  – spinach  – red bell pepper – red onion – spices – Mozzarella – salt and black pepper to taste

What you need:

STEP 1

Preheat to 375 degrees F. Grease a muffin tin with cooking spray. Add all the ingredients in a bowl and mix al well.

STEP 2

Carefully fill each muffin cup three-quarters full. Top with chopped bacon and more shredded cheese. Bake for 20 minutes, or until lightly golden.

STEP 3

Let cool for 5 mins, and then run a butter knife around the edges of each muffin to loosen it. Remove them from the pan and enjoy.
