Easy Egg Salad Recipe

– eggs – red onion – mayonnaise – yellow mustard – parsley – lemon juice – salt and pepper

What you need:

STEP 1

Fill a saucepan with water and . place the eggs inside of it. Bring the water to a boil. Turn off the heat, cover the saucepan with a lid, and let sit for 9-12 minutes.

STEP 2

Carefully drain out the hot water. Transfer the eggs into an ice water bath and let the eggs to sit for 5 minutes to stop the cooking process and to cool down.

STEP 3

Then, peel the eggs and discard the eggs shells.

STEP 4

Chop the hard boiled eggs. In a medium bowl, add hard boiled eggs, red onions, mayonnaise, yellow mustard, parsley, lemon juice salt and pepper.

STEP 5

Mix all together. Serve at room temperature or place it in the fridge for 15 minutes or until it’s cold for your taste.

STEP 6

Place an even amount of egg salad into your meal-prep bowls. Then, add red bell pepper and cherry tomatoes.
