For the turkey:

Remove the giblets from the turkey's cavity and pat it dry with paper towels. Season the inside of the turkey. Stuff it with onion, lemon, and fresh herbs.
Place the seasoned turkey on top of the bed of vegetables in the roasting pan. Cover the turkey loosely with aluminum foil and transfer it to the preheated oven.
Roast until the internal temperature of the turkey reaches 160°F in the thickest part of the thigh; it will continue to rise to 165°F as it rests outside the oven.
Once the turkey is done, remove it from the oven and allow it to rest for at least 30 minutes. Then, carve the turkey and serve it with your favorite side dishes.
