This Greek Quinoa Salad is bright, earthy, and tangy!

In a medium saucepan, bring 2 cups water to a boil. Once  boiling, add rinsed quinoa. Cover the  saucepan and let it cook for 10-15 minutes.

Remove saucepan from the heat, uncover and fluff quinoa with a fork.

In a small bowl, pour the squeezed lemon juice and olive oil. Add minced garlic, salt and pepper.

In a large bowl, add cooked quinoa, red  onions, cherry tomatoes, black olives, red bell pepper, cucumber and  feta cheese. Stir really well.

Pour the vinaigrette dressing over the quinoa salad and stir again. Garnish with fresh parsley.
