– Extra virgin olive oil – Onions, garlic, red pepper – Extra-lean ground beef – Butternut squash, brussels sprouts – Salt and black pepper – Italian seasoning – Red chili flakes – Tomato sauce – Beef broth – Parsley

In a skillet, heat the olive oil. Add onions and garlic. Sauté for about 3 minutes. Add red bell pepper and cook for 2-3 minutes.

Add ground beef in the same skillet. Using a wooden spoon, break up the  ground beef as it cooks.

Add butternut squash, Brussels sprouts, tomato sauce and beef broth. Season with salt, black pepper, Italian season and red chili flakes.

Cover the skillet and cook until the butternut squash are tender. Cook for about 7 minutes. Garnish with fresh parsley.

Place an even amount of ground beef butternut squash into 4 different containers and keep it in the fridge for up to 4 days.
