Roasted Butternut Squash Mash

– butternut squash – extra virgin olive oil – cloves garlic  – ghee butter – salt and black pepper – cayenne pepper

Preheat the oven to 400ºF. Wash the butternut squash, and cut it in half lengthwise. Using a spoon, scoop out the seeds.

Place halves face up on the baking sheet. Drizzle with olive oil. Then, season with salt, pepper, and garlic.

Roast for 45-60 minutes. Remove the squash from the oven, and let it cool for about 5 mins. Remove all the squash flesh from the skin.

Place the squash flesh into a bowls for mashing. Add all the ingredients, and mash it well until fluffy and smooth. Sprinkle with some cayenne pepper.

Place it in a bowl and add more ghee or olive oil on top.
