Simple Kale Salad with Avocado Dressing, which is so delicious, and it’s done in 5 minutes by pulsing the dressing ingredients in a food processor. Easy, healthy, gluten-free, low-carb and paleo friendly!

For the salad

  • 3 cups kale — ribs removed and leaves chopped
  • 3 cups red cabbage — chopped
  • ½ cup red onion — chopped
  • ½ cup red bell pepper — chopped

For the dressing

  • 1 avocado
  • 1 cup chopped parsley
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 1/2 cup water
  • 2/3 cup olive oil
  • 1/2 cup pine nuts
  • Salt and black pepper to taste


  1. In a large salad bowl, add kale, red cabbage, red onions and bell pepper. Set aside.
  2. In a food processor, pulse all ingredients until smooth. Add less water if you prefer your dressing creamer. The amount of water will depend on what consistency you want.
  3. Taste to check the seasoning and pour over the salad. Mix everything very well. Enjoy!
