Healthier Chocolate Chip Cookie Bars

These Healthier Chocolate Chip Cookie Bars are made with whole wheat flour, coconut sugar and semi-sweet chocolate chips. It tastes as good as the traditional recipes!

Ingredients

  • 1 stick (8 tablespoons) — unsalted butter softened
  • 1 cup coconut or granulated sugar
  • 1/2 cup almond butter
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 2 cups white whole wheat flour or whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups dark or semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, mix together the butter and coconut sugar. It's about 2 minutes.
  3. Then, add the almond butter and mix until smooth.
  4. Add the eggs and vanilla and mix again until it is creamy.
  5. Add the flour, baking soda, salt and 1 tablespoon water.
  6. Mix to combine all the ingredients together.
  7. Add the chocolate chips and fold in.
  8. Press the dough firmly into a greased 9x13” baking dish.
  9. Bake for 18 minutes.
  10. Let cool and cut into squares.
