Chocolate Almond Butter Cookies

These gluten-free Chocolate Almond Butter Cookies are made with few simple ingredients and it’s ready in 15 minutes.

  • 1 cup natural almond butter
  • 1 teaspoon melted coconut oil
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg — slightly beaten
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • ½ cup dark chocolate chips


  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, whisk all the ingredients together, except the chocolate chips.
  3. When all the ingredients are combined, add the chocolate chips and fold in.
  4. Scoop out 1 tablespoon of the batter and roll dough into balls.
  5. Place on the tray with silicone mat or parchment paper and flat each dough ball with the palm of your hand.
  6. Bake for 8-10 minutes.
  7. Let them cool completely to remove from the baking sheet. Makes 18 cookies.
