Pumpkin Alfredo Sauce with Italian Sausage - Bring the fall flavour to your dinner table with this super creamy and easy Pumpkin and Italian Sausage Alfredo Sauce.

Ingredients

  • 12 oz box whole wheat spaghetti
  • 1 pound sweet Italian sausage
  • 1/2 cup onions — diced
  • 3 cloves of garlic — minced
  • 1 cup of homemade pumpkin puree — or canned pumpkin puree
  • 1 ½ cups half & half
  • ½ cup grated parmesan cheese
  • 1 tbsp fresh parsley — chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. In large pot of boiling salted water, cook pasta for about 8 minutes or until tender. Drain it and set aside.
  2. Meanwhile, in a large skillet over medium heat brown the sausage. Set aside on a paper towel lined plate to drain.
  3. In the same skillet, add onions and cook until they are translucent.
  4. Add garlic and cook for about 30 seconds.
  5. Then, add the pumpkin puree and half & half. Whisk to combine everything well.
  6. Add in the grated parmesan, salt and pepper.
  7. Let the sauce simmer for about 5 minutes.
  8. Return the cooked sausage to the skillet and add the pasta as well.
  9. Top with fresh parley and parmesan for garnish
