Gluten-free Dulce de Leche Mug Cake

This Gluten-free Dulce de Leche Mug Cake is very moist, flavorful, and only takes 3 minutes in the microwave to be ready. Don't have dulce de leche? Just use peanut butter instead and make it vegan as well!

Ingredients

  • 3 tbsp coconut flour
  • ¼ tsp baking powder
  • 4 tbsp coconut milk
  • ½ medium ripe banana — mashed
  • 1 tbsp dulce de leche — save some to put on the top
  • ½ tsp vanilla extract

Instructions

  1. In a small bowl, add the flour and baking powder. Mix well until combined.
  2. Add all the remaining ingredients and stir until mixed well.
  3. Pour the mixture into 2 small mugs.
  4. Microwave them for about 2-3mins. The time will depend on the power of the microwave and the thickness of the mug.
  5. Remove from the Microwave and top the cakes with a little bit of dulce de leche.
  6. Let them cool down for about 2 minutes before serving.
