One-Pan Chicken in Mushroom Sauce

Simplify your weeknight dinner with this One-Pan Chicken in Mushroom Sauce. This requires little effort and it is very flavorful.

For the Mushroom Sauce

  • 2 tablespoons grass-fed butter
  • 1 onion — diced
  • 3 garlic cloves — minced
  • 9 oz or 227g of cremini mushrooms
  • 1 cup chicken broth
  • 2 tablespoons red wine
  • 2 sprigs thyme
  • 1 bay leaf
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon green onions — chopped


  1. On a plastic board, cut chicken into small pieces and season with salt and pepper.
  2. In a skillet over medium heat, add olive oil and sauté chicken for about 2-3 minutes. You don’t need to cook it through. Don’t forget to stir well. Set chicken aside.

  3. Add butter, chopped onions, and minced garlic into the same skillet. Cook for 2-3 minutes.
  4. Add the cremini mushrooms and sauté for more 5 minutes.
  5. Add the cooked chicken to the skillet, the chicken broth, red wine, thyme, bay leaf, salt, and pepper. Stir to combine all the ingredients well.
  6. Bring to a boil. Once it is boiling, reduce the heat and simmer it for about 8-10minutes or until the sauce is thick.
  7. Garnish with green onions before serving.
