Chicken and Mango Couscous Salad

Make this Chicken and Mango Couscous Salad and you will have a super delicious, healthy and flavourful meal for lunch or dinner.

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cup cooked chicken, diced
  • 1 red bell pepper — seeded and diced
  • 1 English cucumber — diced
  • 1 mango — diced
  • 1 shallot — finely chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and fresh ground black pepper
  • 1 tbsp fresh basil — chopped


  1. In a medium bowl, place the couscous. Add the boiling water and cover.

  2. Let rest for 5 minutes. Fluff with a fork. Let cool completely.
  3. In a bowl, combine the remaining ingredients with the cooled couscous. Season with salt and black pepper.
  4. If desired, spoon into a large serving platter.
  5. Sprinkle with the basil.
