Kale Tomato Tortellini Soup

This Kale Tomato Tortellini Soup has become the favorite soup at home just because it is so flavorful and easy to make ever!

Ingredients

  • 1 tablespoon olive oil
  • ½ cup onion — diced
  • 2 cloves garlic — minced
  • 4 cups chicken or vegetable broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (9-ounce) package refrigerated three cheese tortellini
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • 3 cups kale — chopped
  • 2 tbsp grated Parmesan cheese

Instructions

  1. In a large pot over high heat, add olive oil. When the pan and the oil are hot, turn the heat down to medium.
  2. Add onions and garlic. Stir occasionally and cook for about 3-5 minutes or until the onions are golden brown.
  3. Add the remaining ingredients, except the kale
  4. Bring it to a boil and cook for about 7 minutes or until the tortellini is cooked through.
  5. Add kale and cook for 2-4 minutes more.
  6. Taste and add any extra seasonings, if necessary.
  7. Before serving, top the soup with parmesan.
