This Spinach Sweet Potato Soup is a hearty and comforting meal that is so easy and quick to make, loaded with ground turkey, sweet potato, and spinach!

  1. In a large pot over high heat, add olive oil. When the pan and the oil are hot, turn the heat down to medium.
  2. Add ground turkey and garlic. Stir occasionally and cook for about 10 minutes or so.
  3. Add onions, celery, red peppers and dried parsley. Cook until onions are gold brown.
  4. Add the sweet potato, broth and bring it to a boil.
  5. Cook for about 10 to 15mins.
  6. Add spinach, cayenne pepper, salt and pepper and cook for 4 minutes more.
  7. Taste and add any extra seasonings, if necessary.
