Ingredients

  • 1.5 lbs lamb chops
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh thyme chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  • In a bowl, combine lamb chops, olive oil, red wine vinegar, rosemary, thyme, garlic powder, salt and black pepper. Rub the marinade into the meat and cover and chill for 1 hour in the fridge.
  • Preheat air fryer to 400°F.
  • Add lamb chops to the air fryer basket and cook for 5 minutes. Flip and cook for more 4 minutes or until lamb chops reach an internal temperature of 145°F for medium-well. Enjoy!

Notes

  • Pat the chops dry with a paper towel before seasoning them to absorb excess moisture.
  • Purchase lamb chops that are similar in size and thickness, so they cook evenly.
  • Be careful not to overcrowd the air fryer. Arrange the chops in an even, single layer.
  • Use a meat thermometer to check the internal temperature of the lamb for 145°F.
  • To Store: Place leftovers in an airtight container and keep in the fridge for 3-4 days.
  • To Freeze: Wrap each chop tightly in plastic wrap, and then store in a freezer-safe bag or container for 2-3 months.
  • To Reheat: Reheat leftovers in the air fryer or oven at 350°F, or on the stovetop until heated through.
