  • In a medium-sized bowl, mix together eggs, almond milk, coconut oil, and sugar for about 3 minutes.
  • Then add the coconut flour, baking powder, cacao powder, and vanilla extract. Stir well until combined.
  • Pour the mixture into two mediums mugs or microwave safe containers.
  • Microwave for 3-5 minutes, depending on the power of your microwave and the thickness of the mug.
  • Allow them to cool down for 2 minutes before serving.

Notes

  • Always double check that your baking powder has not expired as it'll affect the taste and rise of the mug cake.
  • If you do not have a microwave safe mug, use a ramekin. 
  • Feel free to add some chocolate chips or chunks to the batter for more chocolatey goodness.
  • To store: this chocolate mug cake is best eaten immediately while still warm. If you must store it for later, keep it wrapped in the fridge for up to a day.
