Instructions

  • In a medium bowl, place the couscous. Add the boiling water and cover.
  • Let rest for 5 minutes. Fluff with a fork. Let cool completely.
  • In a bowl, combine the remaining ingredients with the cooled couscous. Season with salt and black pepper.
  • If desired, spoon into a large serving platter.
  • Sprinkle with the basil.

Notes

  • I like using English cucumbers as they're sweeter and are seedless.
  • Dice everything into small pieces so you can get an equal amount of each ingredient in every spoonful. 
  • I like using whole wheat couscous to make the salad healthier but you can use regular couscous if you prefer.
  • To store: Store leftovers in an airtight container in the fridge for up to 4 days.
  • To reheat: You can eat this chilled or reheat it in the microwave.
