Tuna Cucumber Cups Recipe

Ingredients

  • 2/3 cup chunk light tuna
  • 1/3 cup  red onions finely chopped
  • 1 tsp fresh parsley chopped
  • 2 tbsp + 1 tsp light mayonnaise
  • Salt and ground black pepper
  • 2 english cucumber
  • Chili pepper powder for garnishing

Instructions

  • In a small bowl combine all the ingredients, except the chili powder and mix well.
  • Then, cut cucumber into 1" thick rounds.
  • Using a small spoon, scoop out the pulp and seeds of the cucumber.
  • Don’t forget to leave about ¼" on the bottom to make them into little cups.
  • Spoon tuna mixture into the cucumber cups and create a little mound on top of each cucumber cup.
  • Top with chili pepper powder.

Notes

  • Adapted from Tastes Lovely.
  • I refer English cucumbers as they're sweeter and seedless. Feel free to use a different type if you prefer.
  • Feel free to use tuna packed in oil or water.
  • Make sure everything is diced up finely so they're evenly distributed throughout the tuna.
  • To store: I recommend eating these as soon as possible. Try to enjoy them as soon as possible. You can wrap them up and keep them in the fridge for up to a day.
