Beef and Zucchini Skillet

– olive oil – baby potatoes – salt and black pepper – beef stew meat  – onion powder – Italian seasoning – butter – cloves garlic – zucchini  – Fresh thyme

What you need:

STEP 1

 Preheat oven to 400 F. Line a baking sheet with parchment paper. Set aside. In a bowl, add potatoes, olive oil, salt and pepper. Mix all well to combine.

STEP 2

 Place the potatoes in a single layer on the prepared baking sheet. Bake for 30 minutes or until browned and tender.

STEP 3

Place steak bites, onion powder, Italian seasoning, salt and black pepper in a bowl. Mix everything together well.

STEP 4

Add olive oil in a skillet over medium-high heat. Place the steak bites in the skillet. Add butter and garlic and cook for 1 min.

STEP 5

Add zucchini and cook for more 3 minutes or until zucchini is tender.

STEP 6

Remove potatoes from the oven and add to the beef and zucchini skillet.

STEP 7

Mix everything well and garnish with fresh thyme.

Place an even amount of beef, zucchini and potatoes into 4 medium glass containers. Cover with the lid and place in the fridge for up to 4 days.
