– virgin olive oil – garlic cloves – onion – leek – carrots – white potato – 1 teaspoon paprika – ground coriander – salt and black pepper – veggie broth – green onions for garnishing

What you need:

STEP 1

In a large pot over high heat, add olive oil, garlic, onions and leeks. Sauté for 5 minutes, stirring regularly.

STEP 2

Add carrots, potatoes, paprika, coriander, salt, and pepper. Mix everything well.

STEP 3

Add vegetable broth and bring it to a boil. Cover and cook for about 20-25 minutes or until the vegetables are soft.

STEP 4

Using an immersion hand blender or a counter-top blender puree the veggies.
