Grilled  Lamb Chops

– 8 lamb chops – Salt and black pepper to taste – chimichurri sauce – olive oil

What you need:

STEP 1

In a food processor, add shallot, garlic, vinegar, salt and pepper. Pulse or chop button, stopping and scraping down sides until all is finely minced.

STEP 2

Add in parsley, oregano and red pepper flakes. Pour in olive oil while pulsing several times until all is minced.

STEP 3

 Serve it over meat, poultry, seafood or even roasted/grilled vegetables.

STEP 4

In a freezer bag, add lamb chops, salt and pepper and ¼ cup of chimichurri sauce. Close the bag and shake until lamb chops are coated.

STEP 5

Preheat grill over medium heat. Pour olive oil on the grill and place lamb chops on it.

STEP 6

Cook for 3 minutes on every side of the lamb. Lamb chops will be cooked when chops get the internal temperature of 140°F in the thickest part.

STEP 7

Transfer the chops to a platter and drizzle with the rest of the chimichuri sauce over them.
