Low-Carb Chicken Zucchini Enchilada

– Olive oil – Onion  – Salt and black pepper – Garlic  – Ground cumin – Chili powder – Shredded chicken – Red enchilada sauce – Zucchini – Shredded cheddar – Sour cream

Cook the onion and salt until golden and brown. Add the garlic, cumin, chili powder, shredded chicken, and enchilada sauce.

Using a vegetable peeler, make thin slices of zucchini. Add the chicken mixture. Roll up, and transfer to a baking dish.

Repeat the last step with the remaining zucchini and chicken mixture.

Use the remaining enchilada sauce to top the zucchini enchiladas. Sprinkle with the shredded cheese.

Bake for 20 minutes, until the cheese is melted. Garnish with sour cream and cilantro, and serve.
