Ingredients

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine the olive oil, salt, pepper, onion powder, and garlic powder.
  • Place the chicken thighs in a large bowl. Pour the olive oil and spice mixture over the chicken and toss to coat well.
  • Arrange the seasoned chicken thighs on a baking sheet, skin side up, ensuring they are not touching.
  • Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the oven. Brush each thigh generously with BBQ sauce.
  • Turn on the broiler. Place the chicken back in the oven and broil for an additional 3-5 minutes, or until the BBQ sauce is caramelized and the skin is crispy.
  • Remove from the oven and let rest for a few minutes before serving. Serve with coleslaw and boiled corn.

Notes

  • Line your baking sheet with parchment paper for easy cleanup.
  • Pat the chicken thighs dry so the oil and spices stick better.
  • To get the best temperature reading, insert the meat thermometer into the thickest part of the chicken thigh.
