In a medium bowl or large zip-top bag, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, garlic, Italian seasoning, and kosher salt until well combined. Add the chicken breasts or thighs to the bowl or bag. Toss to coat the chicken evenly with the marinade.
Cover (if using a bowl) or seal the bag, then refrigerate for at least 30 minutes, preferably 2–4 hours for best flavor. You can marinate overnight if needed. Remove the chicken from the marinade and shake off any excess.
