In a small bowl, whisk together the soy sauce, honey, garlic, apple cider vinegar, and sriracha. Set aside.
Lightly coat a large skillet with cooking spray and place it over medium-high heat. Add the chicken thighs in a single layer and cook for 4–5 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
Pour the honey garlic sauce over the chicken. Reduce the heat to medium and let it simmer for 2–3 minutes, flipping the chicken once or twice, until the sauce thickens slightly and coats the thighs.
Remove from the heat. Spoon the sauce from the skillet over the chicken and serve warm with white rice and sliced green onions.

Freeze: Let the chicken cool completely, then place it in a freezer-safe container or freezer bag with the sauce. Freeze for up to 3 months. When ready to eat, thaw overnight in the refrigerator.
Reheat: Reheat the chicken in a skillet over medium heat with a splash of water or chicken broth to loosen the sauce. You can also microwave it in short intervals until warmed through.
