Honey Garlic Meatballs

These honey garlic meatballs are homemade with Parmesan and Italian breadcrumbs, baked until golden, and tossed in a sticky homemade sauce with no ketchup, brown sugar, or cornstarch. Ready in 30 minutes.

Ingredients

For the meatballs:

  • 1 lb ground beef
  • ½ cup Italian breadcrumbs
  • ½ cup Parmesan cheese
  • 2 organic eggs
  • 1 cup onion finely chopped
  • 1 tbsp garlic minced
  • ¼ cup almond milk
  • Salt and pepper to taste

Instructions

  • Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan, eggs, onion, garlic, almond milk, salt, and pepper. Mix gently until everything is just combined—don’t overmix or the meatballs will be tough.

  • Use a cookie scoop or your hands to roll the mixture into 1–1½-inch balls. Place them evenly on the prepared baking sheet.

  • Cook in the oven for 18–20 minutes, or until the meatballs are fully cooked through and golden on the outside.
  • While the meatballs are baking, heat a skillet over medium heat. Add the garlic and sauté for about 30 seconds until fragrant. Stir in soy sauce, honey, apple cider vinegar, and sriracha. Let it simmer for 2–3 minutes until slightly thickened.

  • Add the baked meatballs to the skillet with the sauce. Gently toss to coat the meatballs evenly. Let them simmer in the sauce for another 2–3 minutes so they soak up the flavor.

  • Garnish with extra Parmesan or fresh parsley if desired. Enjoy with rice, noodles, or a side salad!

Notes

To store: You can tightly wrap the meatballs, once cooled, and store them in the fridge for up to 3 days.
To reheat: Reheat in the oven until warmed through. You can also reheat them in the microwave.
To freeze: Tightly wrap and freeze for up to 3 months.
