Tuna Cucumber Cups Recipe

- 2/3 cup chunk light tuna
- 1/3 cup red onions finely chopped
- 1 tsp fresh parsley chopped
- 2 tbsp + 1 tsp light mayonnaise
- Salt and ground black pepper
- 2 english cucumber
- Chili pepper powder for garnishing
In a small bowl combine all the ingredients, except the chili powder and mix well. Then, cut cucumber into 1" thick rounds.
Using a small spoon, scoop out the pulp and seeds of the cucumber.
Don’t forget to leave about ¼" on the bottom to make them into little cups.
Spoon tuna mixture into the cucumber cups and create a little mound on top of each cucumber cup.
Top with chili pepper powder.

- I refer English cucumbers as they're sweeter and seedless. Feel free to use a different type if you prefer.
- Feel free to use tuna packed in oil or water.
- Make sure everything is diced up finely so they're evenly distributed throughout the tuna.
- To store: I recommend eating these as soon as possible. Try to enjoy them as soon as possible. You can wrap them up and keep them in the fridge for up to a day.
