Servings: 8 people
- 1 avocado halved, seeded and peeled
- 1/4 cup chopped fresh parsley leaves
- 3 tablespoons olive oil
- 1 small garlic clove
- 1 tablespoon freshly squeezed lime juice
- Salt and pepper to taste
In a food processor, add all the ingredients. and process until smooth. Taste and adjust seasoning. Use this sauce on top of salads, roasted veggies, fish, chicken and veggie noodles. Enjoy!
- You can use a blender instead of a food processor if you do not have a food processor.
- If you do not have parsley, you can use any fresh herbs such as cilantro or basil. The flavor will change a bit but it'll still be tasty.
- To store: To store this creamy avocado sauce, just transfer it to an airtight container and smooth the top with a spoon. Press a small piece of plastic wrap directly onto the surface before sealing the lid. This helps keep it from browning. It will stay fresh in the fridge for about 2 to 3 days. If it thickens a bit, just stir in a splash of water or lime juice to bring it back to its silky, pourable texture.
