  • 1 tablespoon extra virgin olive oil or butter
  • 6 bone-in Chicken thighs
  • kosher salt and black pepper
  • 2 cloves garlic minced
  • 1.5 lbs. sweet potatoes cut in small pieces
  • 1 tablespoon fresh rosemary chopped

Instructions

  • Heat olive oil or butter in a skillet over medium heat. While the butter melts, season the chicken with salt and pepper to taste.
  • Place the chicken, skin-side down, in the skillet and sear until both sides are golden brown. Meanwhile, coat the slow cooker pot with cooking spray and arrange the sweet potatoes inside.
  • Add garlic and rosemary, then season with salt and pepper.
  • Place the seared chicken on top of the sweet potatoes in the slow cooker in an even layer.
  • Cover and cook on high for 1 hour or low for 2 hours.
