- 1 tablespoon extra virgin olive oil or butter
- 6 bone-in Chicken thighs
- kosher salt and black pepper
- 2 cloves garlic minced
- 1.5 lbs. sweet potatoes cut in small pieces
- 1 tablespoon fresh rosemary chopped
Heat olive oil or butter in a skillet over medium heat. While the butter melts, season the chicken with salt and pepper to taste.
Place the chicken, skin-side down, in the skillet and sear until both sides are golden brown. Meanwhile, coat the slow cooker pot with cooking spray and arrange the sweet potatoes inside.
Add garlic and rosemary, then season with salt and pepper.
Place the seared chicken on top of the sweet potatoes in the slow cooker in an even layer.
Cover and cook on high for 1 hour or low for 2 hours.
