Servings: 4 bowls
- 4 cups cubed sweet potatoes peeled (about 1 pounds)
- 1 tablespoon avocado oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon sweet paprika
- 1 pound lean ground beef
- 1 tablespoon tomato paste
- 1½ tablespoons taco seasoning*
- 2 cups low-fat cottage cheese
- 1 large avocado sliced or diced
- 4 tablespoons hot honey
- crushed red pepper for garnish
Preheat the oven to 425°F (220°C). Spread the cubed sweet potatoes on a baking sheet. Drizzle with a little oil and season with salt, pepper, and sweet paprika. Toss to coat evenly.
Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned.
While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned—about 6–8 minutes.
Stir in the tomato paste and taco seasoning. Cook for another 2–3 minutes, until everything is well combined and heated through. Remove from heat.
Divide the roasted sweet potatoes and taco-seasoned ground beef evenly between bowls. Top each with a generous scoop of cottage cheese and avocado.
Drizzle each bowl with 1 tablespoon of hot honey, and sprinkle with crushed red pepper to taste. Serve immediately while everything is warm and fresh. Enjoy!
*If you don’t have taco seasoning, you can make a quick single-use blend for this recipe. Mix together 1 teaspoon chili powder, ½ teaspoon ground cumin, ½ teaspoon paprika, ¼ teaspoon garlic powder and ¼ teaspoon onion powder. This makes just enough to replace the 1 ½ tablespoons of homemade taco seasoning called for, no leftovers!
Fridge: Cook the sweet potato and ground beef mixture, let it cool, then store in an airtight container in the fridge for up to 4 days. Reheat when ready to eat, and add the cottage cheese, avocado, and hot honey fresh.
Freezer: Portion the cooked sweet potato and ground beef into freezer-safe containers or bags. Freeze for up to 2–3 months. Thaw overnight in the fridge, then reheat on the stove or in the microwave. Again, add cottage cheese, avocado, and hot honey just before serving for the best flavor and texture.
