When I saw this viral recipe on TikTok, I knew I had to try it because the flavors instantly reminded me of my Ground Turkey Sweet Potato Skillet, a recipe I created back in 2016, and it’s become one of the most popular on my site and everybody loves it!

Funny enough, I was already enjoying a similar bowl for lunch before it went viral. I’d serve my ground turkey sweet potato with avocado too! The only difference is that this viral taco bowl also has cottage cheese and a delicious drizzle of hot honey, which I hadn’t tried before.

I make this recipe all the time for lunch on busy weekdays. I love it because it is delicious and filling. It is also quick and easy to make. Let’s make it together and I hope you enjoy it as much as I do!

I’ve made this recipe so many times, and honestly, it works beautifully with different ingredients depending on what I have on hand.

Ground Beef: When I use ground beef, the dish always turns out juicier. If I swap it for ground turkey or ground chicken, it becomes lighter and leaner, but it’s still packed with flavor. So you really can’t go wrong.

Sweet Potato: Most of the time, I make it with sweet potatoes, but I’ve also tried regular potatoes and even butternut squash, and they all work great. If I’m craving something green, I’ll toss in spinach, arugula, kale, or even green beans. It’s such a simple way to sneak in veggies, and it makes the dish extra hearty.

Cottage Cheese: My favorite part of this recipe has to be pairing the ground beef and sweet potatoes with cottage cheese. It gives everything a deeper flavor and a creamy texture that ties it all together. If you’re dairy-free, you can totally use a plant-based cottage cheese instead. If you don’t like cottage cheese, you can substitute it with a mix of Greek yogurt and sour cream.

Hot Honey: And finally, don’t skip the hot honey! If you love that sweet-and-spicy combo like I do, this really takes the dish to the next level. It adds the perfect balance and makes everything so irresistible.

How to Make Cottage Cheese Taco Bowl:

Step 1: Preheat the oven to 425°F (220°C). Spread the sweet potato cubes on a baking sheet, drizzle with oil, season with all the spices, then toss to coat.

Step 2: Roast 25–30 minutes, flipping halfway, until tender and golden. Set aside.

Next: Heat a large skillet over medium-high heat. Add the ground beef, tomato paste and some seasonings and cook, breaking it apart until browned.

Then: Cook for another 2–3 minutes, until everything is well combined and heated through. Remove from heat.

Let’s assemble the bowl:

1. I usually scoop the roasted sweet potatoes into four bowls (or meal-prep containers if I’m planning ahead). Then I pile the ground beef on the side and add a good scoop of cottage cheese.

2. To top it all off, I add my favorite taco toppings like some sliced avocado and of course a splash of hot sauce, and a drizzle of hot honey. Honestly, it’s the kind of combo that makes me do a little happy dance. It’s just so perfect. But you can add other favorite toppings like jalapeños, fresh cilantro and chopped red onion and bell peppers.

Ingredients 
 

  • 4 cups cubed sweet potatoes peeled (about 1 pounds)
  • 1 tablespoon avocado oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon sweet paprika
  • 1 pound lean ground beef
  • 1 tablespoon tomato paste
  • tablespoons taco seasoning*
  • 2 cups low-fat cottage cheese
  • 1 large avocado sliced or diced
  • 4 tablespoons hot honey
  • crushed red pepper for garnish

Instructions 

  • Preheat the oven to 425°F (220°C). Spread the cubed sweet potatoes on a baking sheet. Drizzle with a little oil and season with salt, pepper, and sweet paprika. Toss to coat evenly.

  • Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned.

  • While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned—about 6–8 minutes.

  • Stir in the tomato paste and taco seasoning. Cook for another 2–3 minutes, until everything is well combined and heated through. Remove from heat.

  • Divide the roasted sweet potatoes and taco-seasoned ground beef evenly between bowls. Top each with a generous scoop of cottage cheese and avocado.
  • Drizzle each bowl with 1 tablespoon of hot honey, and sprinkle with crushed red pepper to taste. Serve immediately while everything is warm and fresh. Enjoy!

Notes

*Note: If you don’t have taco seasoning, you can make a quick single-use blend for this recipe. Mix together 1 teaspoon chili powder, ½ teaspoon ground cumin, ½ teaspoon paprika, ¼ teaspoon garlic powder and ¼ teaspoon onion powder. This makes just enough to replace the 1 ½ tablespoons of homemade taco seasoning called for, no leftovers!
How to Store
  • Fridge: Cook the sweet potato and ground beef mixture, let it cool, then store in an airtight container in the fridge for up to 4 days. Reheat when ready to eat, and add the cottage cheese, avocado, and hot honey fresh.
  • Freezer: Portion the cooked sweet potato and ground beef into freezer-safe containers or bags. Freeze for up to 2–3 months. Thaw overnight in the fridge, then reheat on the stove or in the microwave. Again, add cottage cheese, avocado, and hot honey just before serving for the best flavor and texture.
