Make the carne asada and allow it to rest before slicing it into bite-size pieces against the grain.
Get the toppings ready. While the steak cooks, chop the onions, roughly chop the cilantro, make the guacamole, and warm or toast the tortillas.
Build the tacos. Fill the warmed tortillas with guacamole, chopped steak and top with onion and cilantro.
To Store: I like to store all the components separately, so they stay as fresh as possible. I recommend using the guacamole within 1 to 2 days, but everything else will stay good for up to 4 days.
To Freeze: You can freeze the carne asada for up to 3 months as long as it’s in a freezer-safe container.
To Reheat: I like to reheat carne asada in a skillet on the stovetop until I completely warm it through.
