This salad is a huge hit in my home with my husband and me during the wintertime because it is very easy to make and tastes delicious. Also, I have to say that it is the best time of the year to add a wonderful, sweet and juicy clementine in your meals because it tastes even better now.

Well, we actually love citrus fruits like oranges and tangerines, but last weekend while we were doing groceries we saw these clementines and we couldn’t resist buying them. We bought a box and in three days we almost didn’t have one left. Why? They are VERY sweet and tasty. I use them in everything, like this Clementine Salad Dressing.

They are so delicious that for me they are like a dessert. We have dinner (this delicious Greek Chicken Salad Bowls), and after dinner, we grab some to eat while we are watching a TV show on Netflix.

So before they are all gone, yesterday I had an idea to add them to my salad. I knew this salad was going to taste wonderful because I am a huge fan of fruits in my salad. I just don’t understand why I didn’t use clementine before in my salads.

This is the first time that I added them and it turned out so delicious, giving a nice sweetness to the dish. I used clementines, but any other type of citrus fruit will work fine in this salad.

As you all know, I love a crunchy element in the salad, and for this reason, I am using cashew nuts. However, you can add any other kind of nuts like walnuts and almonds because it won’t make any difference. All the ingredients that are in there add a little bit of sweetness or crunch to this salad.

This recipe comes together in just a few minutes. So, it is perfect for those busy days when you don’t have time to make anything very complicated for lunch.

Since in this salad, you don’t have lots of protein, you should eat it with some cod fish, baked chicken breast, baked chicken thighs, baked salmon or even a filling bowl of soup.

Ingredients 
 

  • 3 cups Arugula
  • 1 Clementine
  • 1/4 cup Red Onion Sliced
  • 1/2 Avocado Diced
  • 2 tablespoons Cashew Nuts
  • 3 tablespoons Feta Cheese Chopped
  • 2 tablespoons Clementine Salad Dressing

Instructions 

  • In a large salad bowl, mix together the arugula, clementine, red onions and avocado.
  • Just before serving, add the clementine salad dressing and toss until all the ingredients are coated.
  • Then, garnish with cashew nuts and feta cheese. Enjoy!

    Made it 2 times.  Substituted Swiss cheese for feta and walnuts for cashews cause that’s what I had at home.  We loved it!
