Kale blueberry pineapple salad is sweet, tart, and full of vitamins. Make a big batch to eat all week!
I love kale. I eat it almost every day. But I have to make a confession. I didn’t enjoy much eating raw kale in a salad because I always thought kale has such a tough, bitter and strong taste. But all of this changed when I finally discovered an easy and quick way to make this leaf softer in a salad. I went to a knife skills class to learn how to better use my complete knife set. I learned the names of the knives and what purpose of each one has. So, we diced, chopped, and cut lots of veggies and fruits as a practical task. One of the dishes we prepared was a kale salad with fruit, something similar to this one I am sharing today with you, but with a twist.After we removed the stem from each kale leaf and ripped the leaves into small pieces, we had to place them in a large bowl and toss with a vinaigrette. After that we massaged the leaves very well for about 2 or 3 minutes until all the leaves are totally coated. I’m not saying that I’ve never heard people say that you should massage your kale leaves to make your raw salad, but I have to be honest I’ve never believed it would make a huge difference on the kale texture and even on the taste. I was totally wrong. It does make the difference and now I can definitely eat my kale raw in so many different types of salad.One thing that I also found out at this fun class was that this salad is perfect to make ahead of time for dinner or for a light lunch on the go, to bring to a picnic or a summer party because kale leaves take more time to become soggy or mushy. Isn’t that great?? I love this and on top of that kale is also nutrient dense, loaded with fiber; vitamins A, K and C; powerful antioxidants; and a good source of minerals. Kale is definitely a great ingredient that has to be a constant presence in your salad, since it will make your meal more satisfying and you will keep your energy levels up all day. I really hope you can give this salad a try and if you don’t have one of those ingredients below, just replace them for what you have in your fridge and enjoy it!
