The spice rub I use here is simple but really well balanced. Smoky paprika, garlic, a little lemon zest mixed right into the rub, and a squeeze of fresh lemon juice right at the end. Key Ingredients
Cod fillets – I use fresh cod fillets that are about 1-inch thick because they cook perfectly in 8 to 10 minutes without drying out. If your fillets are thinner, I recommend checking them around the 7-minute mark. When I can, I always go for wild-caught cod since it has a much firmer texture and fresher flavor than farmed. If you’re using frozen cod, make sure to thaw it completely in the fridge overnight before cooking. I learned the hard way that cooking it straight from frozen gives you uneven results because the outside overcooks before the inside is done.
Olive oil – I use olive oil to help the seasoning stick to the fillets and get that nice golden color on the outside. You can also use avocado oil if you prefer. I don’t recommend skipping it though because without it, the spice rub tends to fall right off during cooking.
Paprika – I use sweet paprika, but smoked paprika is a great swap if you want a deeper, smokier flavor. It is also what gives the cod that beautiful golden-red color you see in the photos.
Garlic powder – I prefer garlic powder over fresh garlic here because fresh garlic tends to burn quickly in the high heat of the air fryer and turns bitter.
Salt and freshly ground black pepper – I always pat the fillets completely dry before adding any seasoning. Any moisture left on the surface creates steam in the air fryer instead of that golden crust, so this step really matters.
Fresh lemon – I squeeze fresh lemon juice over the cod right after it comes out of the air fryer, and I also love adding a little lemon zest into the spice rub for extra brightness. Please use fresh lemon here because bottled lemon juice just does not give you the same flavor.
Fresh parsley – I use it mainly for garnish, but chopped dill or chives work beautifully too if you want to switch things up.

Instructions to Make Air Fryer Cod
Pat the fillets completely dry. This is the most important step and it’s easy to skip. Any moisture sitting on the surface of the fish will steam in the air fryer instead of sear, and you’ll end up with soggy rather than golden cod. A few seconds with paper towels makes a real difference.
Preheat the air fryer. I preheat to 400°F for about 5 minutes. Some people skip this, but starting with a hot basket gives you that slightly crisp exterior right away. It also means your cook time is more predictable.
Make the spice rub. Mix the olive oil, all the spices and a little lemon zest in a small bowl, then rub it evenly over both sides of the fillets. The oil helps the seasoning adhere and encourages browning. Don’t be shy with it.

Don’t overcrowd the basket. Place the fillets in a single layer with a little space between them. Air fryers cook by circulating hot air. If the fillets are touching or overlapping, that circulation gets blocked and the fish steams instead.
No need to flip. Unlike pan-frying, you don’t need to flip the cod halfway through. The air circulates all around the fillet. Cook for 8–10 minutes depending on thickness.

Check for doneness. The cod is ready when it flakes easily with a fork and reaches an internal temperature of 145°F. If you don’t have a thermometer, gently press the thickest part, it should feel firm but not hard, and the flesh should look opaque all the way through.
Rest and finish with lemon. Let the fillets rest for a minute, then squeeze fresh lemon juice over the top. That hit of acidity at the end ties the whole dish together.

- 1 tablespoon olive oil
- ½ teaspoon paprika
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper
- Fresh lemon juice

Instructions
- Preheat your air fryer to 400°F (200°C) for about 5 minutes. Pat the cod fillets dry with a paper towel to remove excess moisture.
- In a small bowl, mix together olive oil, paprika, garlic powder, salt, and black pepper to create a spice rub. Rub the spice mixture evenly over both sides of the cod fillets.
- Place the seasoned cod fillets in the air fryer basket, ensuring they are not overcrowded. Air fry the cod at 400°F (200°C) for 8-10 minutes, depending on the thickness of the fillets. It’s not necessary to flip the fillets halfway through the cooking time.
- Check for doneness by inserting a fork into the thickest part of the fillet. It should easily flake apart.
- Once cooked, remove the cod from the air fryer and let it rest for a minute. Squeeze lemon juice on top. Garnish with fresh parsley and slices of lemon.
Notes
- Use cod fillets that are similar in size, so they cook evenly.
- For easy cleanup, you can line the air fryer basket with parchment paper. If you do, there’s no need to spray the basket with oil.
- To Store: Once the leftovers have cooled, you can keep them in an airtight container in the fridge for 3 to 4 days.
- To Freeze: You can keep cooked cod in the freezer for up to 3 months. I prefer to store it in a container rather than a bag so it doesn’t get squished.
- To Reheat: I like to reheat leftovers in the air fryer since it’s quick and easy. You can also use the oven or stovetop if you prefer.
