This beautiful Asparagus Tart features tender-crisp asparagus and melted cheese atop a flaky puff pastry crust. Delicious, easy to make, and the perfect recipe to welcome Spring.
I’m always excited when Spring rolls around because it means Asparagus is in season! Even though it’s available year-round, asparagus is extra delicious right now.

I love this asparagus puff pastry tart recipe because it looks fancy, but it’s easy to make. You can make it with just 5 ingredients and 5 minutes of prep time. This asparagus tart is easy for a simple meal or special occasions like Easter or Mother’s Day. Both casual and fancy.
How To Make an Asparagus Tart
Ingredients
- Puff pastry — I use a store-bought puff pastry (10×15-inch), thawed so it’s pliable.
- Cheese — I love the combination of freshly grated Gruyere cheese and Parmesan cheese. You can also use a cheese mixture of cheddar and goat cheese, if you prefer.
- Asparagus — Look for asparagus stalks that are mostly the same size, so they cook evenly. They should also be firm to the touch with tightly closed spears.
- Egg — A beaten egg brushed along the edges makes the puff pastry nice and golden.
P.S. I didn’t add salt and pepper since the Parmesan cheese already brings lots of flavor and a bit of saltiness.
Instructions
- Before you begin, preheat your oven to 400°F, and line a baking sheet with parchment paper.
Prepare the puff pastry:
- On a lightly floured surface, roll out the thawed puff pastry sheet until it’s rectangle and large enough to fit your baking sheet.
- Then, place the rolled-out puff pastry on your baking sheet lined with parchment paper.
- Score the puff pastry about 1 inch from the edge on all sides, creating a border. Be careful not to cut all the way through the pastry dough.
Add cheese and asparagus:
- Sprinkle the shredded Gruyère (or cheddar) cheese evenly within the scored border.
- Then, arrange the trimmed asparagus spears on top of the cheese. Alternate the direction of the tips, so they fit nicely together.
Top with Parmesan and egg wash the border:
- Next, sprinkle the grated parmesan cheese evenly over the asparagus.
- Brush the edges of the puff pastry with the beaten egg for a golden brown finish.
Bake and enjoy:
- Now, the asparagus tart is ready to bake in your preheated oven for about 15-20 minutes.
- Once baked, let it cool a bit before slicing, then serve and enjoy!
Expert Tips
- The puff pastry should still be cold when it goes in the oven. So, I thaw it just until it’s pliable, but not so much that it becomes too soft to work with.
- Be sure to remove the end from each asparagus stalk. You can simply snap them off or line the stalks up and trim the ends with a knife.
- I recommend using asparagus that’s similar in size and trimming the ends to the same length. This way, they’ll cook evenly and look nice and neat.
- After you wash your asparagus, dry it thoroughly with a paper towel. Excess moisture can make the puff pastry soggy.
- I highly recommend freshly grated cheese for this recipe. It melts easier and has a much better flavor than pre-grated cheese.
How To Store Leftovers
- To Store: Once cooled, I like to transfer the leftovers to an airtight container and storage them in the fridge for up to 3 days. I don’t recommend freezing an asparagus tart because the texture will not be the same once you thaw it.
- To Reheat: To keep puff pastry crispy, I prefer to reheat leftovers in oven or toaster oven until warm.

- Appetizers: I like to serve asparagus tart with bacon-wrapped dates, stuffed mushrooms, and cauliflower muffins as appetizers. They all go well together.
